Lauki Ka Achar ( Bottle Gourd Pickle)

Ingredients to make Lauki Ka Achar ( Bottle Gourd Pickle)

  • Medium size lauki or bottle gourd cut into cubes -1
  • turmeric - 1/2 tsp
  • Mustard oil or sesame seeds oil - 3-4 tbsp
  • red chilli powder - 2 tbsp
  • Freshly ground mustard seeds - 1 tsp
  • Freshly ground fenugreek seeds - 1 tsp
  • Freshly ground coriander seeds - 1 tsp
  • Crushed garlic clove - 1-2
  • salt - 1 tbsp

How to make Lauki Ka Achar ( Bottle Gourd Pickle)

  1. Wash and cut the bottle gourd with skin into small cubes. Boil some water with turmeric, Immerse these pieces in it and cover the vessel for 5 minutes.
  2. After 5 minutes, drain the water and spread the lauki pieces in a plate to dry.
  3. Add all the other ingredients in a sterilized glass jar and mix well with a clean dry spoon.
  4. After the bottle gourd pieces dry up nicely, add them to the jar as well. Close the lid and shake vigorously to mix.
  5. Place the jar in the sunlight for 2 to 3 days. Enjoy it with rice or rotis and a generous helping of desi ghee.

My Tip:

It stays good upto 15 to 20 days in the refrigerator or even more. Always use a clean dry spoon to serve.
