  • Ghee/ clarified butter 2 teaspoon
  • Milk 2 cups

How to make Mango Sheera

  1. Heat ghee in pan.
  2. Add dry fruits and resin and roast well
  3. Add suji/ semolina to pan and roast till aroma comes and it turns golden brown
  4. Once you add semolina, the raisins will shrink in size. Important tip to know that semolina is properly roasted is to roast it till the raisins swell again due to evenly heated semolina.
  5. Keep on moving the ladle continuoulsy so as to roast the semolina evenly till raisins swell
  6. Add aphonso puree and milk and mix well. This has to be done quickly so ass to avoid lumps in semolina.
  7. Add sugar and cardamom powder also and mix well. You can adjust the sugar according to sweetness of mango puree
  8. Cook it till water evaporates and mixture forms a lump
  9. Cover with lid and let it rest for 1-2 minutes on medium flame
  10. Swith off the flame and keep covered.
  11. Serve when lukewarm

My Tip:

Roast semolina on a low flame. Use a thick bottomed vessel so as to avoid sticking to the bottom.
