Gluten-Free, Butter less Orange Cake

Ingredients to make Gluten-Free, Butter less Orange Cake

  • 1 big orange or two small oranges
  • 3 eggs
  • 1 cup sugar
  • 3 cups almond flour (if you don't have almond flour handy, you can grind almonds to make almond flour)
  • 1 tsp Baking powder

How to make Gluten-Free, Butter less Orange Cake

  1. Pre heat oven to 350 degree F or 180 degree C
  2. Prepare a spring form pan by applying melted butter and then line the bottom with parchment paper
  3. Boil the oranges with water for 15 to 20 minutes or until the orange is fully cooked. Enough water to cover the orange.
  4. Grind the orange in a food process until smooth (you can use the left over water from the cooked orange)
  5. Beat the eggs and sugar until pale
  6. Add the orange, almond flour and baking powder
  7. Mix the batter very gently. Do not over mix.
  8. Pour into the baking pan and bake for an hour
  9. Before serving, dust some sugar on top
