Ingredients to make Kaju Apple

  • 3/4 + 1 tbsp cashew powder
  • 1/2 cup sugar
  • 1/4 cup water
  • 1/2 tsp cardamom powder
  • 5-6 Saffron leaves
  • A few drops of red food coloring
  • 1 tsp Ghee (to grease your hands before kneading)
  • 7 cloves
  • One paint brush

How to make Kaju Apple

  1. To make the sugar syrup, take a pan add in sugar, water and cardamom powder, saffron leaves and cook till it becomes of a single string consistency.
  2. Keep stirring the mixture on and off, after about 5 minutes you will see that bubbles form. Slowly the sugar solution moves to a single string consistency.
  3. To check if the sugar solution has reached the required consistency, take a little bit of syrup in the back of your spatula and try stretching it between your index finger and thumb.
  4. If this forms a fine string, then the required consistency is reached. (This is a very important step ).
  5. Add in the cashew powder and stir on a medium flame. The sugar will start hardening rapidly, it should look like a sticky and soft dough. Then turn off the gas and stir continuously as it might burn.
  6. Now take the cashew dough to the greased surface and knead it gently with greased palms for a few seconds.
  7. Take a small glass bowl and add a few drops of red food colour. Now divide the dough into small equal parts and shape them in to balls
  8. Press slightly with the thumb on the head of each ball to give it the shape of a small apple. Paint all balls with the red color with the help of a brush.
  9. Garnish one clove on each apple head. Your Kaju Apple is now ready .
My Tip: Knead the cashew dough while it is warm otherwise it will become hard. If the dough is a little hard, you can pour in some milk and heat in a microwave for few seconds till it becomes soft.
