Ingredients to make Rajkachori

  • 250 gm Refined flour
  • 200gm rava or semolina
  • 50gm hot oil
  • salt [as per taste]
  • A pinch of baking soda
  • oil for Deep frying
  • Soaked and boiled moong dal - 1 cup
  • Boiled potato two
  • chopped onion - 1
  • Chopped tomato - 1
  • Soaked and boiled peas and choley [1/2 cup]
  • tamarind chutney [as per taste]
  • Green chutney [as per taste]
  • One cup fresh curd
  • Roasted cumin powder [as per taste]
  • Fresh coriander leaves
  • pomegranate seeds [1/2 cup]
  • Farshan or sev

How to make Rajkachori

  1. Take maida and rava, add salt baking soda and hot oil.
  2. Mix all this and with the help of water, make a tough dough.
  3. Cover it with a muslin cloth and rest it for one hour .
  4. Mash it nicely make a average size puri and deep fry on a medium flame.
  5. One puri takes approximately 4 to 5 minute to be cooked.
  6. Let it cool and keep aside.
  7. To assemble, take one kachori put some boiled and chopped potatoes.
  8. Add chopped onion, moong ,choley and all the masalas .
  9. Put some whipped curd , green and tamarind chutney.
  10. Put some pomegranate seeds, garnish with some generous amounts of sev and serve.
