ABOUT Meethi(Sweet) Boondi / Gram Flour Dessert RECIPE

These are fried boondis prepared out of gram flour and then dipped in sugar syrup. They are sweet and chewy.

Ingredients Serving: 4

  1. Besan Flour/Gram Flour- 1 Cup(140 Grams)
  2. Baking Soda- 1 Pinch
  3. Cloves- 2
  4. Raisins- 1/2 tbsp
  5. Ghee/Clarified butter 1/2 tbsp
  6. Olive Oil(or any cooking oil) for Deep Frying
  7. yellow and green food colors(Optional) A Pinch
  8. Cashew nuts or broken cashew nuts-1 tbsp powdered
  9. Granulated White Sugar- 3/4 Cup(150 Grams)
  10. Water- 1/2 Cup (117 Ml)

Instructions

  1. In a small pan fry raisins and cloves on medium heat using 1/2 tbsp of ghee till raisins look puffy, about 1 min. Remove and keep aside.
  2. Sieve besan flour with soda in a mixing bowl. Add water little by little to form a thick paste.
  3. Keep adding water till you get flowing consistency batter. Divide the batter into 2 separate bowls. Add orange food color in one and green in the other.
  4. I have used my flat grater to make boondi. In a pan, add oil and heat it. Keep the heat on medium.
  5. Hold the grater on top of the oil, take a laddle full of batter, pour it over the grater and spread with a ladle so that the batter drops down through the holes in the oil.
  6. Spread it with the ladle .Flip the Boondis in 3-4 seconds, remove on a paper towel to remove excess oil. Repeat till batter is over.
  7. In a heavy bottom vessel, add sugar and water and cook on medium heat till sugar reaches 1 string consistency. Switch off the stove.
  8. Take the fried boondis and mix cashew nut powder and fried raisins-cloves.
  9. Immedietely drop these boondis in the sugar syrup which will crystalize it.
  10. Mix well, making them soft and chewy.Keep it for cooling for around 30 mins.
