Ingredients to make Mango Rasmalai

  • Ingredients for chena :
  • cow milk 1 lt [full fat]
  • sugar 1 cup
  • Water 4 cup
  • Mango essence 3-4 drops (optional )
  • Ingredients for mango dip :
  • Mango slice 1 bowl
  • Milk 3 cup
  • Sugar as per ur taste as well as depends on mango sweetness
  • Chopped pistachio and saffron for garnishing

How to make Mango Rasmalai

  1. First we will make chena . Bring milk to a boil in a pan then add lemon juice in it
  2. Keep on stirring and you will see the milk getting curdled.
  3. When you see the greenish whey, pour the curdled milk in to a pan lined with a thin cotton napkin
  4. Now bring together the edges of the cotton napkin and gently squeeze out the remaining whey from it .
  5. Rinse the collected bundle of chena in water and keep a weight on chena bundle for 30 mins .
  6. Now chena is ready . Now grind it and then make lemon size balls from it .
  7. Now take a wok put sugar in it and add water and mango essence and boil it and then put chena balls in it and cover with lid or a plate . Cook it on medium flame for 10 mins .
  8. After 10 mins switch of the flame and remove the lid . And allow to cool it .
  9. Now we will make mango dip .
  10. For mango dip boil the milk and reduce it to half the amount and then add the sugar in it and switch off the flame . Leave it aside to cool it
  11. Now grind the mango slice and make fine paste
  12. Now in cold milk add mango paste and again grind it . Mango dip is ready
  13. Now in mango dip put chena
  14. Now mango ras malai is ready put it in refrigerator for chilling .
  15. When it completely chilled garnish with pistachio and saffron and serve it .
