Ingredients to make Mango Rasmalai

  • Ingredients for chena :
  • cow milk 1 lt [full fat]
  • sugar 1 cup
  • water 4 cup
  • mango essence 3-4 drops (optional )
  • Ingredients for mango dip :
  • mango slice 1 bowl
  • Milk 3 cup
  • sugar as per ur taste as well as depends on mango sweetness
  • Chopped pistachio and saffron for garnishing

How to make Mango Rasmalai

  1. First, we will make chenna. Bring milk to a boil in a pan then add lemon juice in it.
  2. Keep on stirring and you will see the milk getting curdled.
  3. When you see the greenish whey, pour the curdled milk into a pan lined with a thin cotton napkin.
  4. Now bring together the edges of the cotton napkin and gently squeeze out the remaining whey from it.
  5. Rinse the collected bundle of chenna in water and keep a weight on chenna bundle for 30 mins.
  6. Now chenna is ready. Now grind it and then make lemon size balls from it.
  7. Now take a wok put sugar in it and add water and mango essence and boil it and then put chenna balls in it and cover with a lid or a plate. Cook it on a medium flame for 10 mins.
  8. After 10 mins turn off the flame and remove the lid. And allow to cool it. Now we will make mango dip.
  9. For the Mango dip boil the milk and reduce it to half the amount and then add the sugar in it and switch off the flame. Leave it aside to cool it. Now grind the mango slice and make a fine paste.
  10. Now in cold milk add mango paste and again grind it. Mango dip is ready. Now in mango dip put chenna.
  11. Now mango ras malai is ready put it in fridge for chilling. When it completely chilled garnish with pistachio and saffron and serve it.
