Baigan Menthika

Ingredients to make Baigan Menthika

  • Small brinjals 4-6nos
  • Fenugreek seeds 1/2 teaspoon
  • 2 big tomatoes
  • 1 big onion
  • curry leaves
  • Ginger garlic paste 2table spoon
  • Urad dal 1 teasp
  • Arhar dal 1teaspoon
  • Tamarind water 2tablespoon
  • Jeera
  • Dhania
  • Red chilles dry

How to make Baigan Menthika

  1. For menthika powder:
  2. Roast all the dals with fenugreek seeds along with jeera,dhania,chilli
  3. Fry the marinated eggplants in oil. Keep aside.
  4. In a pan fry onions till golden with a pinch of asafotieda, curry leaves and green chilles
  5. Add ginger garlic paste
  6. Add tomates and roast the masala
  7. Add all dry masala powders like curry powder and garam masala powder
  8. After the gravy is done add brinjals to it
  9. Atlast add tamarind water
