Ingredients to make Pumpkin cold soup

  • Pumpkin 200gms
  • Tomato 30gms
  • Bay leaf 1
  • Black pepper 1/4tspn
  • Salt to taste
  • Lemon juice 1/2tspn
  • Cashewnuts 5to6

How to make Pumpkin cold soup

  1. Peeled and deseed the pumpkins. cut pumpkin and tomato into small pieces.
  2. Melt butter in a saucepan . Add pumpkins and tomato into it. slightly stir and add water .put a bayleaf and cover the pan.cook slowly until vegetables are soft.
  3. Remove bayleaf and make a puree of cooked vegetables. Add salt and black pepper. Keep the puree in fridge for 15 minutes.
  4. Pour the soup in a glass , add lemon juice for flavour.
  5. Top it with roughly pasted cashewnuts and roasted pumpkin seeds.
