Raw Mango thokku

Ingredients to make Raw Mango thokku

  • 1 kg raw mango
  • Turmeric powder 4 tsp
  • Salt 4 tsp
  • Red Chilli powder 4 tsp
  • asafoetida 1 tsp
  • Jaggery 1/2 kg cut into small/coarse powder
  • Til oil (sesame) 1 litre
  • Fenugreek (methi) seeds 2 tsp

How to make Raw Mango thokku

  1. Firstly, roast fenugreek seeds and Hing with a little oil, cool it and dry grind in the mixer. Keep aside.
  2. For the main pickle, remove the skin and grate the raw mangoes and add the grated mangoes into a kadhai. To this add turmeric powder, chilli powder, jaggery powder, salt and mix.
  3. Stir well keeping on low flame, to this add oil and keep stirring till the raw smell goes and the whole mixture looks like a halwa (shiny in texture). When mixing it make sure that it doesn't stick to the kadhai below.
  4. Continuously keep stirring till it turns into a smooth paste Put off the flame and allow it to cool.
  5. Once cool you need to add the previously prepared fenugreek and Hing powder to it.
  6. Stir well and transfer the same into a glass bottle and store. Yummy Mango Thokku ready to eat.
My Tip: Tastes best when served with curd rice.
