    Bacon Roasted Corn-fed Chicken

    Ingredients to make Bacon Roasted Corn-fed Chicken

    • Chicken breast: One large breast with skin
    • Streaky Bacon: 4 rashers
    • Lime juice: of half a lime
    • Salt: to taste
    • Crushed whole pepper: generous or to taste
    • Cloves: 5-6

    How to make Bacon Roasted Corn-fed Chicken

    1. Prick chicken pieces all over and marinate chicken for an hour with lime juice, salt and pepper for an hour.
    2. Place 2 rashers of bacon at the bottom of a roasting pan or dish. Place chicken breast on them and secure the other 2 rashers on the chicken breast with the cloves.
    3. Preheat oven at 300 degrees centigrade
    4. Roast for about 50 minutes. This does not need any basting since the melting fat from the bacon keeps it moist.
