ABOUT Bacon Roasted Corn-fed Chicken RECIPE

I don't know what is special about corn-fed chicken but saw it the other day at the store where I buy my meats. Corn-fed chicken it said. I bought it with skin. The breast pieces were rather large, almost 5" across. So I decided to roast a piece. The surprise element was that the meat was very soft and tender, even though I hadn't brined it. The skin was roasted to the crisp and the charred bacon was an additional flavour.

  1. Chicken breast: One large breast with skin
  2. Streaky Bacon: 4 rashers
  3. Lime juice: of half a lime
  4. Salt: to taste
  5. Crushed whole pepper: generous or to taste
  6. Cloves: 5-6

Instructions

  1. Prick chicken pieces all over and marinate chicken for an hour with lime juice, salt and pepper for an hour.
  2. Place 2 rashers of bacon at the bottom of a roasting pan or dish. Place chicken breast on them and secure the other 2 rashers on the chicken breast with the cloves.
  3. Preheat oven at 300 degrees centigrade
  4. Roast for about 50 minutes. This does not need any basting since the melting fat from the bacon keeps it moist.

Pritha looks delicious. Bacon makes everything delicious - cholesterol to be ignored !!!!
