Ingredients Serving: 10

  1. All purpose flour 1 1/2 cup
  2. Baking powder 1 teaspoon
  3. Baking soda 1/4 teaspoon
  4. Unsweetened cocoa powder 3 tablespoon
  5. Unsalted butter 1/2 cup
  6. Salt 1/4 teaspoon
  7. Powdered sugar 1 cup
  8. Red liquid food colour 2 tablespoon
  9. Honey 1 tablespoon
  10. Milk at room temperature 2-3 tablespoon
  11. Heavy cream 3/4 cup (for ganache)
  12. White chocolate finely chopped 200gms (for ganache)
  13. Unsalted butter 1 tablespoon (for ganache)

Instructions

  1. In a big mixing bowl combine flour, baking powder, baking soda and cocoa powder and set aside
  2. Cream together butter and sugar in a mixer till light and fluffy
  3. Add milk, honey and red food colour to this mixture and mix until well blended
  4. Slowly start adding dry ingredients to it and mix until everything is well combined
  5. Cover the dough with a cling wrap and refrigerate it for at least 1 hour
  6. Take the dough out, remove the cling wrap
  7. Sprinkle the surface with powdered sugar and roll the dough to 1/4 inch thick, using a round cutter cut the dough into circles
  8. Preheat the oven at 180 degree Celsius for 10 minutes
  9. Line a baking tray with a parchment paper or silicon mat
  10. Arrange cookies leaving 2 Inch space
  11. Bake the cookies for 12-14 minutes at 180 degree Celsius
  12. Allow them to cool on the rack before applying ganache
  13. For ganache In a small pan heat cream on low heat stirring continuously
  14. Add chopped chocolate, gently stir to incorporate
  15. Add butter and stir again
  16. Allow it to cool for and hour and whisk using a hand mixer to make it light and fluffy
  17. Spread 1 tablespoon of ganache on a cookie, press second on top to make a sandwich, repeat the process with the remaining cookies
