Pickled Onions

Ingredients to make Pickled Onions

  • 2 medium onions, thinly sliced
  • 6-7 black peppercorns
  • 1 cup apple cider vinegar
  • 1/2 cup lime juice
  • 1-2 lemon slices
  • 100 g sugar
  • 1 tbsp salt

How to make Pickled Onions

  1. In a bowl, soak the onion slices by pouring warm water over the onion. Keep it for at least 10 mins
  2. Meanwhile, in another saucepan, add the apple cider vinegar, lemon juice, the peppercorns, salt and sugar. Bring it to a simmer.
  3. Check the sweetness or the salt and add more as per your preference. Add the lemon slices
  4. Drain the water from the onion. Put the onions into a jar, and pour over this brine.
  5. Let it cool down and refrigerate. This pickle stays upto 2 weeks
My Tip: Store in a clean dry jar. Refrigerate when not in use
