ABOUT Aam Ki potli RECIPE

It is a famous dish of UP. Usually stuffed with dal, I have added ground mango for the stuffing.

Ingredients Serving: 5

  1. For the dough: 3cups of flour (Maida)
  2. 1/4 cup sooji
  3. Salt to taste
  4. Ajwaain 1 pinch
  5. 2tbsp oil for moyan
  6. For mixture : Green mango 2
  7. Sugar 1/4 cup
  8. Black pepper 1/2 teaspoon
  9. Salt to taste
  10. Black salt 1/2 tsp
  11. Saunf powder 1/2 tsp
  12. Heeng 1/4 tsp
  13. Coriander powder or crushed 1/2 tsp
  14. Take oil for deep fry

Instructions

  1. For the dough : Take a bowl put Maida, sooji, oil, salt, Ajwaain n water.
  2. Mix nicely and knead into a medium tight dough.
  3. The dough should be of smooth texture, leave it for sometime.
  4. For the stuffing : Heat oil in a pan and put heeng then add mango puree or grinded mango. Cook further
  5. Now add sugar, salt, black salt, pepper, Coriander powder Saunf powder and mix well.
  6. The stuffing is ready. It should not be very dry,
  7. For making potli : Make equal size balls from the dough.
  8. Spread the dough ball in your palm like a katori. Place the stuffing in the center and seal it properly like a potli style.
  9. Slide the potliees in the hot oil, one by one.
  10. Fry on medium heat until becomes light brown and crispy.
  11. Now you can serve with chutney or tomato ketchup
