Ingredients to make Baingan bhartha

  • 4 medium brinjals
  • [Big round variety]
  • 3 medium onions chopped
  • 4 big tomatoes chopped
  • 1 cup fresh chopped coriander leaves
  • 1 tbsp green chillies chopped
  • 1 tsp red chilli powder
  • 2 tbsp coriander powder
  • Salt to taste
  • 2 tbsp refined oil
  • 1 tsp sabut Jeera
  • 1 tsp jeera powder
  • 1 tsp garam masala

How to make Baingan bhartha

  1. Take the brinjals n roast them
  2. Till the skin is totally burnt
  3. After roasting put them in water
  4. Peel the brinjal skin n check
  5. that there r no worms
  6. Mash the brinjal now
  7. Keep aside
  8. Heat oil in a kadhai
  9. Add jeera n let it splutter
  10. Add chopped onions
  11. Saute them till brownish in
  12. Color. Add chopped tomatoes
  13. Now saute for 5 minutes
  14. Add red chilli powder,
  15. Coriander powder
  16. Salt to taste n jeera powder
  17. Cook on medium flame
  18. For about 10 minutes
  19. Check if oil comes on sides
  20. Saute till juices of tomatoes
  21. Is released n cooked
  22. Now add the mashed brinjals
  23. Cook for 10 more minutes
  24. Till it gets coated in tomatoes
  25. N spices
  26. Mash in btwn with a masher
  27. Cook till it releases oil on sides
  28. Adjust salt n spices
  29. Now transfer it in a bowl
  30. Garnish with fresh coriander
  31. Leaves n green chillies

My Tip:

Always check brinjal after roasting for worms
