ABOUT Spring Onion Akki Rotti and Onion Chutney: RECIPE

Akki Rotti is a traditional Breakfast item of Karnataka. Usually it is prepared either by adding chopped greens, grated veggies or only onion. Here I have added chopped spring onion greens as well as bulbs, which is mixed with rice flour to form a thick pliable dough to make super tasty gluten free flat bread. I have served it with coconut and onion chutney, which we traditionally prepare in a Mangalore house hold.

Ingredients Serving: 4

  1. For Spring Onion Rotti:
  2. Rice flour – 3 cups
  3. Spring onion -1 bundle
  4. Green chillies – 2
  5. Salt -as required
  6. Fresh Coconut gratings – 2 table spoons
  7. Water – to bind
  8. Oil – to fry the rotti.
  9. For Onion Chutney:
  10. Coconut – 1 cup
  11. Red chillies – 2
  12. Salt -as required
  13. Tamarind – ¼ teaspoon
  14. For seasoning –
  15. Coconut Oil – 1 teaspoon
  16. Mustard – ½ teaspoon
  17. Curry leaves – 1 spring

Instructions

  1. Method to make rotti:
  2. - Wash and clean the spring onion and green chillies.
  3. - Chop green chillies, spring onion greens and bulbs finely.
  4. - Take one wide steel bowl and mix in rice flour, chopped green chillies, spring onions, coconut gratings, salt.
  5. - Make a pliable dough by adding sufficient water.
  6. - Keep it aside for 5 to 10 minutes to absorb all the seasoning as well as to soak.
  7. - When you want to make rotti, take one piece of banana leaf or butter paper.
  8. - Take a little rotti dough in your moist hand, and start patting in a circular motion by dipping your hand in a water in-between.
  9. - Sprinkle one teaspoon of oil over this patted rotti and keep it ready.
  10. - Heat iron griddle and cook oil sprinkled rotti by putting upside down on it.
  11. - After 2 to 3 minutes, peel off banana leaf or butter paper.
  12. - Sprinkle little oil over it and flip.
  13. - Cook and serve hot with Onion and coconut chutney.
  14. Method to Make Chutney:
  15. -Roast the red chillies by putting 2 drops of oil.
  16. - Grind coconut, roasted chillies, tamarind by adding required amount of water and salt into smooth paste.
  17. - Do seasoning by heating oil, add mustard. When mustard starts to splutter, add curry leaves and pour this on the ground chutney.
