Mango Phirni

Ingredients to make Mango Phirni

  • Basmati rice-1/2 cup (soaked for atleast 20-25 minutes)
  • Milk-1litre
  • Almonds-1/4cup fine chopped
  • Cashew-1/4cup finely chopped
  • Mango pulp /puree-1cup
  • Cardamom powder-1/2teaspoon
  • Sugar-1/2 cup or as per taste
  • Mango pieces, cut into a thin slices or cubes

How to make Mango Phirni

  1. Drain the soaked basmati rice, grind to a fine paste by adding 1/2 cup of water.
  2. Bring the milk to a boil in a heavy bottomed vessel.
  3. Simmer it on medium flame till it is reduced to 3/4th of milk's original quantity.
  4. Eventually add the ground rice mixture, keep on stirring till it mixes well into the milk and it starts to thicken.
  5. Stir continuously so that the bottom does not burn. Cook for 10-15 minutes on medium flame.
  6. Add cardamom powder and sugar and continue to stir till the sugar dissolves and it turns into a nice creamy mixture with no lumps, just like the smooth custard.
  7. Now turn off the flame and allow it to come to room temperature and add the mango pulp into the phirni.
  8. Mix the phirni well and allow it to cool. Transfer it into a serving bowl and garnish with some mango pieces, fine chopped almond and cashew. serve chilled.
My Tip: One may add almonds and cashew paste, prepared with milk into it instead of chopped almond and cashew.
