ABOUT Mawa Gehwar RECIPE

Ingredients Serving: 4

  1. For Gehwar
  2. 250gm all purpose flour
  3. 50gm ghee
  4. 50gm milk
  5. 1 Cup water
  6. 12-14 ice cubes
  7. For sugar syrup
  8. 3/4cup Sugar
  9. 3/8cup(1/4+1/8) water
  10. 10 drops of lemon juice
  11. 15 sticks Saffron
  12. For RABRI
  13. 1cup Milk
  14. 1can evaporated milk
  15. 2tbsp Sugar
  16. 3/4tbsp cardamom powder
  17. To Garnish
  18. 60gm almond
  19. 50gm pistachios
  20. Silver varak
  21. Saffron sticks

Instructions

  1. In a bowl add ghee and 4 ice cubes. Beat the ghee until its fluffy.
  2. Take out the ice cubes and add to the water. In the water add the remaining ice cubes and add let it chill.
  3. Add little flour then mix well. Add some milk and make a smooth, lump free paste.
  4. Add more flour and repeat it. Until all flour is finished and batter resembles full fat whole milk consistency.
  5. In a tall ,thick bottomed pot . Add ghee Until 1/4th full and let it heat up on high heat.
  6. Drop roughly 1/8th amount of the batter from height (about a feet ) so that it forms a continuous stream. You will see it splitting , foaming and moving on the side of the vessel.
  7. When the foam settles down, pour another 1/8th batter in the center.
  8. Move the batter in the center to the side,thus making a nice sized hole in the center to pour the batter in.
  9. When Gehwar is nicely browned. Keep it holding over the pot for about 30 seconds.Until all ghee drains off. Keep the Gehwar aside to cool off. Spread sugar syrup on the Gehwar with a spoon.
  10. For rabri : In a pan add milk, cardamom powder and sugar. Reduce the flame. When the milk reduces to a thick paste, turn off the flame.
  11. To assemble: Right before serving, warm the rabri and spread it over Gehwar. Sprinkle the nuts and saffron over it and apply varak. Serve it.
