Mawa Pistachios Eggless Cake

Ingredients to make Mawa Pistachios Eggless Cake

  • Whole Wheat - ½ cup
  • Maida - ½ cup
  • Mawa - ½ cup
  • Butter - 50 grams
  • Sugar - ½ cup
  • Baking Powder - ½ teaspoon
  • Baking Soda - ¼ teaspoon
  • Milk - ⅓ cup (80 millilitre)
  • Vanilla Essence - ½ teaspoon
  • Saffron strands a pinch
  • Mixed nuts (pistachios, almond and cashew nuts) - 2 tablespoons chopped
  • Pistachios chopped for garnish

How to make Mawa Pistachios Eggless Cake

  1. Soak the saffron in few teaspoons warm milk.
  2. Take the mawa and saffron in a grinder/blender and pulse for few seconds.
  3. In a mixing bowl add the butter and sugar and stir till both melts.
  4. Add the mawa, milk and vanilla essence and mix well.
  5. Seive the flours, baking powder and baking soda. Add them to the wet ingredients and mix gently and make a smooth batter. Add the chopped nuts and mix gently.
  6. Preheat oven for 10 mins at 180°C. Grease the cake pan with butter or oil.
  7. Pour the batter into the greased pan, sprinkle the chopped pistachios and bake for 35-40 minutes. A tooth pick inserted should come out clean.
  8. Let it cool down, invert, cut and serve.
