Ingredients Serving: 8

  1. 1.25 kilograms grated carrots
  2. 1.25 litres of milk
  3. 1 teaspoon cardamom powder
  4. 1 3/4 cups sugar
  5. 2 teaspoons ghee
  6. few crushed cashews and almonds

Instructions

  1. Take a wide non stick kadai.
  2. Now add milk and boil for few minutes.
  3. Now add grated carrots in that milk and mix it well.
  4. Now cook on high flame for 20-30 minutes. You need to keep stirring in between or else it will burn.
  5. Now milk will be reduced and you can add cardamom powder to it.
  6. Now you can reduce the flame to medium.
  7. Now keep stirring it for another 15-20 minutes.
  8. Now you will see the milk is almost reduced.
  9. In a different pan add ghee and roast the nuts and keep it aside for garnishing.
  10. Now the halwa comes to a thick consistency.
  11. Now add the roasted nuts and ghee in the halwa and mix well.
  12. Switch off the stove and transfer it to a serving bowl.
  13. Your delicious carrot halwa is ready to dig in.
