Prawns biriyani

Ingredients to make Prawns biriyani

  • 250 gms parboiled basmati rice
  • 500 gms prawns : clean and dried
  • 3 medium Onion paste
  • Ginger garlic paste 1 teaspoon
  • Curd : 150 gms
  • For Masala : garam masala 1/2 teaspoon
  • Haldi : 1/2 teaspoon
  • Salt to taste
  • 1 teaspoon sugar
  • For garnishing :
  • Deep fried onion rings
  • Diced tomatoes
  • Green chillies whole

How to make Prawns biriyani

  1. Cook the previously soaked rice separately, leave it slightly uncooked . Strain and let it cool
  2. In a wok : heat vegetable oil plus 2 teaspoon butter .
  3. Add onion paste , saute till golden brown
  4. Add ginger garlic paste , all masala , salt and sugar . Cook until the masala leaves oil.
  5. Add prawns and stir fry on medium flame for 9 minutes only.
  6. Once done keep it aside.
  7. In a vessel with heavy bottom , layer the rice and prawns , similar to biriyani layering.
  8. On the top , sprinkle fried onion , whole green chilli, some oil and water mixed. Seal the lid.
  9. Put the vessel on very low flame and dum it for about 15 mins.
  10. Allow the steam to settle. Open the lid , garnish and serve with curd as side dish.
My Tip: To dum on low flame and avoid burning , put an iron griddle on the flame and the vessel on top of it.
