Ingredients Serving: 10

  1. Bitter gourd(karela)- 1/2 kg
  2. Mustard Oil- 1/2 cup
  3. Salt- as required
  4. Red chilli powder- 1 tsp
  5. Fennel seeds(saunf)- 1 tsp crushed
  6. Onion seeds(kalonji)- 1 tsp crushed
  7. Fenugreek seeds(methidana)- 1 tsp crushed
  8. Ajwain- 1 tsp
  9. Mustard seeds- 1 tsp
  10. Turmeric powder- 1/2 tsp
  11. Kashmiri chilli powder- 1 tsp

Instructions

  1. Wash and roughly peel the karelas, let dry thoroughly.
  2. Now slice into rounds and apply salt on it, let sit for a day.
  3. Next day add the karela along with kashmiri chilli, turmeric, mustard seeds, ajwain, fenugreek, onion seeds, turmeric, fennel seeds and red chilli powder in a large glass bottle. Shake vigorously and keep in the sun for 2 days.
  4. After two days, heat mustard oil to smoking point and then let cool. Add oil to the pickle bottle and shake well to coat.
  5. Keep in the sun for a couple of days. Pickle is ready!
