Ingredients to make Mutton Roghan Josh

  • Mutton - 1/2 kg
  • curd - 1/2cup
  • Meat masala - 2 tsp
  • turmeric powder - 1/2 tsp
  • red chilli powder - 1 tsp
  • Kashmiri red chilli powder - 1 tsp
  • ghee or oil - 4 tbsp
  • onion - 2
  • tomato - 2
  • Whole Green cardamom - 4
  • Big cardamom - 2
  • fennel seed - 1 tsp
  • clove - 4
  • bay leaves - 3
  • cinnamon stick -2( 1" size)
  • garlic paste - 1 tbsp
  • ginger paste - 1/2 tbsp
  • coriander leaf - 1 small bunch
  • Green chilli - 2
  • almonds - 8
  • Grated coconut - 1 tbsp
  • water
  • salt

How to make Mutton Roghan Josh

  1. Wash and drain Mutton pieces.
  2. Add Curd and 1/2tsp meat masala and keep in Refrigerator for 1 hour.
  3. Heat Ghee in pan and fry chopped onions till golden brown in colour. Drain snd keep aside.
  4. Boil Tomatoes and let it cool. Remove skin and grind with Coconut, Almonds, green chillies and coriander leaves.
  5. Grind fried onions desperately.
  6. Heat Ghee in pan. Put whole garam masalas. Add Garlic and ginger paste. Cook on high flame for a minute.
  7. Add Turmeric powder, Red chilli powder, Kashmiri red chilli powder and remaining meat masala. Add grounded tomato mixture and cook for 3 minutes.
  8. Add grounded fried onions, salt and marinated Mutton pieces. Cook on high flame till oil start separate.
  9. Add some water and cook till Mutton pieces will done.
  10. Garnish with chopped coriander leaves and serve hot with naan or rice.
