Ingredients to make Chikan e khas

  • Mustard oil 5 tbsp
  • Chikan 700 gm
  • For Marination
  • Red chill powder 1/2 tbsp
  • Turmeric 1/2 tbsp
  • Salt 1tbsp
  • 2 medium size tomatoes
  • Garlic and ginger paste 2 tbsp
  • Mint leaves 1/2 bowl
  • Garam Masala 2 tbsp
  • Lemon juice 1tbsp
  • Green chilly paste 1/2 tbsp
  • Onion paste of 2.
  • For gravy
  • Tejpatta 2
  • Cinnamon Stick 1
  • Leong 4
  • Black cardamom 4
  • Javitri 1/2 small tbsp
  • Star flower 4
  • Red dry chilly 2
  • Seasame seed 2 tbsp
  • Fresh grated Coconut 5 tbsp
  • 2 medium size onion
  • Soaked Kaju 12 pieces
  • Coriander leaves
  • Khuskhus 1/2 tbsp

How to make Chikan e khas

  1. For marination
  2. Mix chikan with yogurt. And other ingredient properly and leaves it for 5 hrs or overnight in the fridge.
  3. Heat pressure cooker. And add mustard oil.
  4. Take out the marinated chikan and let it come down to the room temperature
  5. Add tejpatta. L eong. the cooker.
  6. Add chopped onion and fry it till it not become Brown.
  7. Heat a pan add sesame seed. Grated coconut. And roast them.
  8. In the same pan roast the javitri. Khuskhus. Black anise flower. And red chilly.
  9. After roasting them blend it in a powder. Keep aside.
  10. In the cooker add marinated chikan and fry it properly about 5 minutes. Or till the chikan leaves water.
  11. Meanwhile make a paste of kaju.
  12. Add the kaju paste and masala powder in the cooker and mix it properly in the chikan.
  13. Add warm water to the chikan around 1 glass of water would be enough.
  14. Cover the cooker and let the chikan cook till 1 whistle.
  15. Low the flame for 2 minute.
