ABOUT Bati Chokha RECIPE

This is a dish with a rustic combination, widely loved by the people of UP and Bihar.

Ingredients Serving: 8

  1. For the Bati:
  2. Wheat flour- 4 cups
  3. Yoghurt- 1 cup
  4. Oil- 2 tsp
  5. Salt- 1 tsp
  6. Water to knead the dough
  7. For the Bati filling:
  8. Roasted and finely ground chana or Sattu- 1 cup
  9. Finely chopped coriander leaves garlic ginger green chill
  10. Finely chopped onion- 1
  11. Carom seeds- 1 tsp
  12. Masala from any pickle as per your taste
  13. Oil from the pickle- 2 tsp
  14. For the Chokha:
  15. Potatoes- 3
  16. Small Brinjal- 1
  17. Tomato- 1
  18. Onion- 1 finely chopped
  19. Garlic- 2 tsp finely chopped
  20. Ginger- 1 tsp finely chopped
  21. Green chillies 2-3 finely chopped
  22. Coriander leaves 2-3 tsp finely chopped
  23. Salt to taste

Instructions

  1. For the Bati- Knead all the ingredients for the dough, it should neither be too soft nor too stiff.
  2. For the filling- Mix everything together and adjust according to your taste.
  3. Now make small balls of the dough, roll them slightly and fill a tbsp of the filling in each, seal them tightly and shape into a ball again.
  4. You can bake these in the oven. Preheat the oven to 230 degrees celsius and bake for 10-15 minutes, do keep checking after 10 minutes.
  5. To make the Chokha- Roast the potatoes, brinjal and tomato till they are done. Mash them then add the rest of the ingredients and mix well.
  6. Smear the batis with ghee before serving.
  7. Serve the hot batis with chokha and lots of desi ghee.
