Ingredients to make Bati Chokha

  • For the Bati:
  • Wheat flour- 4 cups
  • Yoghurt- 1 cup
  • Oil- 2 tsp
  • Salt- 1 tsp
  • Water to knead the dough
  • For the Bati filling:
  • Roasted and finely ground chana or Sattu- 1 cup
  • Finely chopped coriander leaves garlic ginger green chill
  • Finely chopped onion- 1
  • Carom seeds- 1 tsp
  • Masala from any pickle as per your taste
  • Oil from the pickle- 2 tsp
  • For the Chokha:
  • Potatoes- 3
  • Small Brinjal- 1
  • Tomato- 1
  • Onion- 1 finely chopped
  • Garlic- 2 tsp finely chopped
  • Ginger- 1 tsp finely chopped
  • Green chillies 2-3 finely chopped
  • Coriander leaves 2-3 tsp finely chopped
  • Salt to taste

How to make Bati Chokha

  1. For the Bati- Knead all the ingredients for the dough, it should neither be too soft nor too stiff.
  2. For the filling- Mix everything together and adjust according to your taste.
  3. Now make small balls of the dough, roll them slightly and fill a tbsp of the filling in each, seal them tightly and shape into a ball again.
  4. You can bake these in the oven. Preheat the oven to 230 degrees celsius and bake for 10-15 minutes, do keep checking after 10 minutes.
  5. To make the Chokha- Roast the potatoes, brinjal and tomato till they are done. Mash them then add the rest of the ingredients and mix well.
  6. Smear the batis with ghee before serving.
  7. Serve the hot batis with chokha and lots of desi ghee.
My Tip: Note- Preferable to use masala and oil from lal mirch ka achaar. Dal seasoned with ghee also enhances the taste of bati chokha.
