ABOUT Awadhi chicken dum biryani RECIPE

Foods from awadhi cuisines have been influenced by the Nawabs of awadh. This receipe is royal, aromatic, delicious, flavoured with herbs, species and saffron. Awadhi biryani is different from the Hyderabadi biryani in terms of taste and flavors. It can be served with raita or side gravy.

Ingredients Serving: 6

  1. For Marination :
  2. 1 kg Chicken
  3. Curd 150 gms
  4. Sliced Onion 2 deep fried
  5. Chicken Biryani masala 4 tbsp
  6. Salt to taste
  7. Green cardamom 6-7
  8. Black cardamom 3-4
  9. Cloves 7-8
  10. Javitri 2-3 strands
  11. Cinnamon 1.5 inch
  12. Ginger paste 2 tbsp
  13. Garlic paste or crushed 2.5 tbsp
  14. FOR RICE COOKING :
  15. Basmati Rice 1/2 kg
  16. Green Cardamom 2-3
  17. black cardamom 2
  18. Shahi jeera 1/2 tsp
  19. Lemon juice 1 tbsp
  20. Bay leaves 2
  21. Oil 1 tbsp
  22. Salt to taste
  23. For masala :
  24. 2 onions
  25. 2 tomato
  26. Garam masala powder 1 tsp
  27. Salt to taste
  28. Red Chilli powder 1-2 tsp
  29. FOR ASSEMBLING :
  30. Gulabjal 1 tsp
  31. Kewra jal 1/2 tsp
  32. Red food Colour 1/2 tsp
  33. Ghee 2-3 tbsp
  34. Coriander leaves
  35. saffron strands

Instructions

  1. Wash the chicken pieces well. For marination : Add chicken to the bowl put curd, all species, salt, chicken biryani masala, ginger, garlic and set then aside for 2 hrs.
  2. Deep fry the sliced onion like this.
  3. Now mix the fried onions and left over fried onion oil in the marinated chicken.
  4. Mix well & keep it aside for 1 hr or more than that.
  5. Bring water to a boil in large pot add oil, lemon juice, salt, species.
  6. Add the washed, soaked & drained Basmati rice. Cooked untill 90%done in a medium flame.
  7. Now come to the marinated chicken, add green chillies in it and saute it in a low heat 3-4 mins. Continue to cook on a medium-Low heat until the chicken is fully done and soft.
  8. On the other side heat oil in a pan add onions saute for few minutes now add tomatoes, salt, black pepper, Garam masala and make masala.
  9. Now layer the rice, chicken and the onion tomato masalas, add Kewra jal & gulab jal, Sprinkle some saffron strands, red food colour & Pour ghee over the rice.
  10. Sealing it in a traditional way or you can use foil, place a lid and then a heavy object over it. Cook this in a low flame for 10-12 mins. Switch off the flame and allow to rest for another 10 mins. Sprinkle Coriander leaves in last.
  11. Serve awadhi chicken dum biryani with raita.
