Escargot: French Spiral Pastries

ABOUT Escargot: French Spiral Pastries RECIPE

Literally translated, escargots are snails. These snails though are made with sweet pastry dough and filled and baked with sweet cheese, spices, jams or dried fruit of your choice. I've made these with apricot jam and cinnamon

Ingredients Serving: 6

  1. For the pastry:
  2. 450g plain flour
  3. 1 tsp salt
  4. 2 tbsp sugar
  5. 1 tsp cinnamon
  6. 50 g fresh yeast
  7. 250 ml milk
  8. 1 egg beaten
  9. 250 grams butter
  10. For the filling:
  11. 1 cup apricot jam
  12. 1/2 tsp cinnamon powder
  13. 1/2 cup chopped dried apricots
  14. 2 tblsp melted butter
  15. 2 tblsp melted apricot jam

Instructions

  1. Sift flour, salt, sugar and cinnamon together. Mix yeast with 2 tblsp of the milk until creamy and stir into the flour with the remaining milk and the egg.
  2. Mix to a dough well. Knead until smooth and shiny. Almost 10 minutes.
  3. Make large slices of the butter and keep it chilled. Roll out the pastry on a lightly floured surface to a rectangle about 1 cm thick.
  4. Place about 1/3 sliced butter over the center strip of the dough, leaving a gap around the edges. Fold like an envelope. Chill this dough for 15 minutes.
  5. Roll out the dough again. Place 1/3 sliced butter in the center and fold like an envelope. Chill for another 15 minutes.
  6. Roll the dough again. Place the final 1/3 sliced butter and fold like an envelope. Chill for an additional 15 minutes.
  7. Finally roll out the dough into a large rectangle.
  8. Brush the inside with melted butter. Then empty out the cup of jam and spread it through and through, making sure you leave atleast a 1/4 inch boundary. Sprinkle with cinnamon and dried apricots.
  9. Roll up like a swiss roll. Cut into thin slices almost 15-16 pieces you should get out of this. Place them flat side down on a baking tray and leave to prove for 30 minutes.
  10. Meanwhile preheat the oven to 180 degree. Bake for 15- 20 minutes until the tops are golden brown. Brush with additional jam on top.
