Khachapuri or Georgian Cheese bread

Ingredients to make Khachapuri or Georgian Cheese bread

  • 100 grams yogurt / curd
  • 1 egg
  • 250 grams flour sifted
  • 1/3 tsp salt
  • 1 1/3 tsp baking powder
  • 50 grams butter
  • For the filling:
  • 100 grams feta cheese
  • 200 grams mozarella cheese
  • Salt to taste
  • Pepper to taste
  • For the egg wash
  • 1 egg
  • 2 tblsp water

How to make Khachapuri or Georgian Cheese bread

  1. Mix together egg and yogurt until smooth. Add in half the flour, all the salt and baking powder. Mix to make a smooth dough.
  2. Add in all the butter and the remaining flour. Knead well. And then cover and chill the dough for half an hour.
  3. Preheat the oven to 220 degree centigrade. Mix in the feta cheese, mozarella, salt and pepper. Make sure the mixture is salty but not over the top. Divide into two. Set aside.
  4. Divide the dough into two halves. Dust the rolling surface and roll out the dough to a sort of thick circle. Put the cheese in the center. Gather the sides of the dough and fold in it. Then roll out into an 8 cm circle.
  5. Transfer to a baking tray. Repeat the process with the other portion of the dough as well. Meanwhile make the egg wash by whisking the egg and water together. Brush the top of the flatbread with egg wash.
  6. Bake for 10 to 15 minutes or until the top of the flatbread is golden brown. Serve hot.
