Its my kids favourite recipe. As they dont use to like baingan, but this rolls they just love it.It is very easy and quickest recipe.

Ingredients Serving: 3

  1. 1 brinjal thinly sliced
  2. Salt to taste
  3. 1/2 tsp Pepper
  4. oil for cooking
  5. 1 1/2 tsp coriander seeds
  6. 1/2 tsp cumin seeds
  7. 1 1/2 tsp sesame seeds
  8. 3/4 tsp poppy seeds
  9. A pinch of methi dana
  10. A pinch of turmeric powder
  11. 1/2 tsp red chilli powder
  12. 1 tbsp grated coconut
  13. 2 tbsp roasted peanuts
  14. 6-8 garlic roughly chopped
  15. 1 inch ginger roughly chopped
  16. Jaggery grated
  17. 2 tbsp tamarind pulp
  18. 1 spring of curry leaves

Instructions

  1. Slice the brinjal into round discs Add salt and pepper on both sides and keep aside.
  2. Now dry roast the onions till they turn lightly brown and soften.
  3. Dry roast together coriander seeds,sesame seeds ,peanuts,cumin seeds, poppy seeds ,dry coconut;,and methi dana till they began to change colour.
  4. Grind together roasted onions, roasted spices,ginger,garlic,Salt?,Turmeric Powder, Red Chilli Powder and jaggery to a very fine paste.
  5. Add the tamarind pulp and mix well
  6. Place the Masala in the brinjal slices and roll it up.
  7. Add the brinjal rolls and grill until cooked
  8. Heat olive oil in a Kadai and add curry leaves and sauté for a minute.
  9. Garnish with curry leaves and serve hot
