Ingredients to make Bhara baingan wraps

  • 1 brinjal thinly sliced
  • Salt to taste
  • 1/2 tsp Pepper
  • oil for cooking
  • 1 1/2 tsp coriander seeds
  • 1/2 tsp cumin seeds
  • 1 1/2 tsp sesame seeds
  • 3/4 tsp poppy seeds
  • A pinch of methi dana
  • A pinch of turmeric powder
  • 1/2 tsp red chilli powder
  • 1 tbsp grated coconut
  • 2 tbsp roasted peanuts
  • 6-8 garlic roughly chopped
  • 1 inch ginger roughly chopped
  • Jaggery grated
  • 2 tbsp tamarind pulp
  • 1 spring of curry leaves

How to make Bhara baingan wraps

  1. Slice the brinjal into round discs Add salt and pepper on both sides and keep aside.
  2. Now dry roast the onions till they turn lightly brown and soften.
  3. Dry roast together coriander seeds,sesame seeds ,peanuts,cumin seeds, poppy seeds ,dry coconut;,and methi dana till they began to change colour.
  4. Grind together roasted onions, roasted spices,ginger,garlic,Salt?,Turmeric Powder, Red Chilli Powder and jaggery to a very fine paste.
  5. Add the tamarind pulp and mix well
  6. Place the Masala in the brinjal slices and roll it up.
  7. Add the brinjal rolls and grill until cooked
  8. Heat olive oil in a Kadai and add curry leaves and sauté for a minute.
  9. Garnish with curry leaves and serve hot

My Tip:

For better flavour always use smaller and younger baingan
