Baghara baingan is a very famous hyderabadi dish, which is generally served with some bagara rice or pulao on the side.

Ingredients Serving: 2

  1. Baingan - 500 gms
  2. Chopped onion - 1
  3. Ginger garlic paste - 1 - 2 tsp
  4. Coriander powder - 1 tsp
  5. Turmeric powder - 1/2 tsp
  6. Red chilly powder - 1 tsp
  7. Roasted peanuts - 1 tsp
  8. Roasted sesame seeds - 1 tsp
  9. Cumin seeds - 1/4 tsp
  10. Salt - to taste
  11. Jaggery - 20 gms
  12. Imli water/tamarind water - 2 tbsp
  13. Clarified butter/ghee - 3 tbsp
  14. Chopped coriander leaves - 1 tbsp

Instructions

  1. Wash and clean the eggplant/baingan
  2. Stalk trimmed and partially slit into quarters
  3. Take a blender add roasted peanuts,roasted sesame seeds to make a fine paste.
  4. Heat clarified butter in a pan.
  5. Add baingan and shallow fry for 8 - 10 mins in a low flame.
  6. Again heat clarified butter in a pan.
  7. Add cumin seeds to crackle.
  8. Add sliced onion and fry till dark brown.
  9. Add ginger garlic paste and add all the spices one by one and saute for one to two mins.
  10. Add two cup of water and salt for gravy and boil it.
  11. Add imli water/tamarind water and jaggery/gur and cook for two mins.
  12. Add roasted peanuts and sesame seeds paste and mix well.
  13. Add fried baingan and after one mins turn off the gas.
  14. Garnish with coriander leaves and serve.
