Ingredients to make Soupy pasta

  • Spinach 2 cups shredded
  • 4 pieces chicken breast
  • 2 eggs beaten
  • 5 tomatoes diced
  • 1 carrot diced
  • 4 spring onions chopped
  • 1 onion diced
  • 5 garlic cloves
  • 1/2 cup cauliflower florets
  • 1 capsicum diced
  • 2 tbsp red chilli sauce
  • 2 tsp soy sauce
  • 1 tsp vinegar
  • 1 inch piece of ginger
  • Salt to taste

How to make Soupy pasta

  1. Take 2 glasses of water in a pressure cooker. Add spinach, tomatoes, spring onions, carrot, garlic, ginger, chicken pieces and salt.
  2. Pressure cook for 15 minutes. Once cooked, take the chicken out and shred it. Blend the boiled vegetables in a blender and sieve it to get a thick soup.
  3. Take a heavy bottomed pan and add 1 tsp olive oil and sauté the diced onion, garlic, capsicum, cauliflower florets and shredded chicken.
  4. Add the soup and simmer. Once it comes to a boil, add the beaten eggs. Now add the red chilli sauce, soy sauce and vinegar.
  5. Lastly add the boiled spiralli wheat pasta. Garnish with fresh coriander leaves.
