About No Bake Buckwheat and Cacao Bars Recipe

Protein packed and nutritious bars or snacks are essential and favourite in our family, especially perfect for active and busy brains and bodies as they stay busy for long day. even I would throw one in the hand bag for myself when I pop out of the house. They are so much better and delicious that we enjoy sometimes as quick breakfast on the go, as a snack or even for dessert !

No Bake Buckwheat and Cacao Bars

Ingredients to make No Bake Buckwheat and Cacao Bars

  • 1 cup lightly roasted buckwheat groats
  • 1/2 cup lightly roasted mix nuts finely chopped
  • 1 1/2 cup dry fruits ( figs dates apricots and raisins )
  • 2-3 tbsp raw cacao powder or nibs ( not cocoa powder )
  • 2 tbsp extra virgin coconut oil

How to make No Bake Buckwheat and Cacao Bars

  1. Dry roast buckwheat groats for 6-7 minutes. Grind half of the buckwheat groats in a grinder.
  2. Add heated coconut oil and add dry fruits in a blender and make smooth puree.
  3. Now add cacao powder, ground buckwheat groats and grind again for few seconds.
  4. Mix remaining roasted buckwheat groats in to mixture, mix well.
  5. Line a baking tray or plate with grease proof paper and place mixture on the tray. Level it with spoon and let it set for half an hour.
  6. Cut into desire shape. Wrap it up in grease proof paper and store in a air tight container.
