Chocolate Muffins

Ingredients to make Chocolate Muffins

  • 260 grams self-raising flour
  • 180 grams caster sugar
  • 170 ml milk
  • 2 eggs, beaten
  • 80 grams plain chocolate chunks
  • 20 grams cocoa powder

How to make Chocolate Muffins

  1. Preheat the oven to 170ºC .
  2. Line a 12 piece holed muffin tray with paper cases.
  3. Take a large bowl, sift the flour, baking pwoder, cocoa and sugar together. Then add the remaining ingredients and mix them with the help of a large spoon.
  4. Spoon this batter into the muffin trays.
  5. Bake for 20 minutes or until it turns golden in colour and Is springy to touch.
  6. Once cooked, transfer them to a wire rack to cool.
  7. Serve warm.

These muffins look great! But, dear, I have a question.. If these muffins come out spongy with only eggs ( without baking soda/powder) , then why do some other recipes have both egg and baking soda/powder?
