As the name describes this modak is a fusion between traditional poornam and carrot halwa

Ingredients Serving: 4

  1. Rice flour 1 cup
  2. Milk 3/4 cup
  3. Salt a pinch
  4. sweetened condensed milk 1/2 cup
  5. chopped almonds 2 tablespoons
  6. ghee 1 tablespoon
  7. Grated carrot 1/2 cup
  8. water 1 cup
  9. saffron few strands

Instructions

  1. First let do the inner stuffing. Take a pan and add little ghee
  2. Once the is melted, add the carrots and sauté it till the raw flavor is gone
  3. Add the milk and cook it on medium flame
  4. Once the added milk is evaporated, add the condensed milk and salt
  5. Now the stuffing would have come together. Add the chopped almonds and switch off the flame and allow it to cool
  6. In the meanwhile, we can make the dough for outer covering
  7. Boil 1 cup of water and add the saffron strands
  8. Add a pinch of salt, ghee and add the rice flour
  9. Stir it well, so that it will form like thick dough
  10. Rest the dough for 10 minutes, our outer covering is ready
  11. Take a lemon size dough and flattened it and add a teaspoon of stuffing(Carrot poornam) that we made earlier
  12. With the edges of the flattened disc make saree fleets like and join the corner to get modak shape
  13. Similarly shape all the modaks and steam it for 15 minutes
  14. Our fusion modak is ready to be served
