Salami and Onion Quiche

Ingredients to make Salami and Onion Quiche

  • For the short crust pastry:
  • 1 cup Flour
  • 1/3 cup cold butter
  • 1/4 tsp Salt
  • 1/4 tsp thyme
  • 1/ 4 cup ice cold water
  • For the filling:
  • 100 grams salami
  • 1 small onion sliced
  • 2 Eggs
  • 1/2 cup Cream
  • 50 grams grated cheese
  • 1/4 cup Milk
  • Pepper to taste
  • a pinch of thyme
  • 1/4 tsp paprika

How to make Salami and Onion Quiche

  1. Start by making the short crust pastry. In a bowl mix together flour, thyme and salt.
  2. Cut the cold butter into cubes and start mixing into the flour. Mix until it resembles bread crumbs.
  3. Add the ice cold water a couple of drizzles until thr dough just about comes together. Roll into a ball. Flatten and chill the dough for atleast 30 minutes.
  4. In a clean work area sprinkle flour. Roll out the dough. Using a cookie cutter cut 12 circles off the dough
  5. In a muffin tray arrange these circles. Chill at this point for another 20 minutes.
  6. Preheat the oven to 200 degree celcius. Pop in the muffin tray. Bake until the shells ans golden and puffy. Remove and let cool.
  7. Now prep for the filling. Chop the salami into bite sized pieces. Arrange onto the baked shells. Add some onions to it as well.
  8. In a bowl mix together the milk, cream, eggs, paprika, thyme and pepper. Pour over the salami and top with cheese
  9. Bake for 20 minutes or until the filling is cooked. Serve warm
