Basil Pesto Pasta

Ingredients to make Basil Pesto Pasta

  • For the pesto:
  • 2 cups of fresh basil leaves
  • 1/2 cup parmesan cheese
  • 2 cloves of garlic
  • 1/3 cup pinenuts
  • Juice of 1 lemon
  • 1/3 cup olive oil
  • Salt to taste
  • For the pasta:
  • 300 grams pasta of your choice
  • Water for boiling
  • Salt to taste
  • Parmesan cheese to garnish
  • Pinenuts to garnish

How to make Basil Pesto Pasta

  1. In a large pot start by boiling the water and adding salt to it. Add the pasta to it and let it cook till just done or al dente. Drain and keep aside
  2. Wash the basil leaves and keep aside. In a blender grind together the pinenuts, garlic and a bit of salt until coarse.
  3. Add the cheese to it and a bit of oil and whiz it again. Add all the basil leaves, more olive oil and a squeeze of lemon juice and blitz until you get a coarse paste. Adjust seasoning.
  4. Toss the pesto with the warm pasta. Top with cheese and pinenuts and serve.
