Carrot Ginger Soup

Ingredients to make Carrot Ginger Soup

  • carrots 1/2 kg
  • ginger piece of 3 Inches
  • coconut milk- 1 cup
  • water- 3 cups
  • A handful of basil leaves, washed and drained
  • onion : 1, peeled and cut
  • A Few peppercorns
  • salt to taste
  • Oregano 2 tbsp

How to make Carrot Ginger Soup

  1. Wash and peel the carrots, onion and half of the ginger. Reserve the other half of the ginger to garnish.
  2. In a pressure cooker, add in the bay leaves, diced vegetables and ginger. Then add in 2 cups of water, salt and peppercorns. Let it pressure cook.
  3. Let it cook till 2 whistles blow, then turn off the stove and let the pressure release itself.
  4. Once cooled, blend this mixture with the help of a hand blender.
  5. Next pour in 1 cup of coconut milk with 1 cup of water. Mix it well to get a smooth consistency.
  6. Then add the basil leaves and the reserved ginger. Let it boil and keep a check on the consistency.
  7. Serve it piping hot.

My Tip:

I love the dash of coconut milk in it. Gives this soup a creamy and an asian touch.
