ABOUT Watermelon Gazpacho RECIPE

Gazpacho is a savory chilled soup generally served in summer. This is usually a tomato based vegetable soup, traditionally served cold in Spanish cuisine. I made a variation to this traditional soup by adding watermelon.

Ingredients Serving: 2

  1. Watermelon cubes- 2 cups
  2. Cucumber- 1/4 cup peeled and cut into small cubes
  3. Apple juice - 1/4 cup
  4. Cranberries- 1 tbsp chopped
  5. Onion- 1 tbsp chopped
  6. Fresh mint and coriander leaves- 1 tbsp chopped
  7. Lemon juice- 1 tbsp
  8. Salt to taste

Instructions

  1. Take half of the cucumber pieces in a small bowl, sprinkle a pinch of salt in it and set aside.
  2. Next, blend the rest of the cucumber pieces along with the watermelon cubes, chopped coriander leaves, mint leaves, cranberry pieces with apple juice, till the watermelon is pureed.
  3. Pour this watermelon puree in to a mixing bowl, add the cucumber pieces, onion pieces, lemon juice and salt to taste.
  4. Keep this Watermelon Gazpacho in the fridge for half an hour.
  5. Serve it chilled with bread or some crackers.
