Ingredients to make Quinoa with vegetables

  • Cooked Quinoa 1 cup
  • Olive oil 1 tsp
  • Mixed vegetables 1 cup
  • Onion 1 small sized
  • Green onion 1
  • Garlic cloves 1 -2
  • Ginger 1/2" piece, finely chopped
  • Curry powder 1/2 tsp
  • Paprika to taste
  • Green chillies 1-2
  • Lime juice 1 tsp
  • Salt and black pepper to taste

How to make Quinoa with vegetables

  1. Cook the quinoa as per the instructions on the packet. Keep aside.
  2. Heat oil in a wok then add onion and green onion white parts, cook this till it becomes translucent in colour.
  3. Next, add in the chopped garlic cloves, ginger, green chillies and cook till the raw aroma fades away. Then add in the mixed vegetables.
  4. Now add in the spices and saute. Cover and cook till the veggies become soft. Check the seasoning and adjust as per taste.
  5. Mix in the cooked quinoa. Add lime juice and sprinkle some black pepper. Garnish with green onions.
