Pumpkin soup with Coconut milk

Ingredients to make Pumpkin soup with Coconut milk

  • 1 cup chopped yellow pumkin
  • 1/2 tsp grated ginger
  • 4-5 pepper corn crushed
  • 1/2 tbsp cooking oil/butter/coconut oil
  • 1/2 cup coconut milk (approx.100ml)
  • 1 cup pumpkin stock
  • Salt to taste

How to make Pumpkin soup with Coconut milk

  1. Boil the chopped pumpkin with salt till its well cooked. Strain out the stock and keep aside.
  2. Heat oil in a pan, add ginger and saute on a very low flame for half a minute. Add the pumpkin, fry for a minute keep aside, cool and puree, adding the stock if necessary.
  3. Mix well and boil the soup in a pan. Add salt and pepper and bring to boil.
  4. Take the pan off the fire and add the coconut milk.
  5. Serve hot with garlic bread.
My Tip: Do not freeze or store the pumpkin puree, a fresh pumpkin soup always tastes better.
