Tortilla Soup

Ingredients to make Tortilla Soup

  • 6 cups Vegetable/Chicken broth
  • 1 can Tomatoes (whole) drained
  • 1 Onion sliced
  • 6 Corn Tortillas
  • 150g Cheese (any)
  • 1 cup water
  • 1 Dried Ancho Pepper(or 1 jalapeno) chopped
  • 1 Avocado chopped
  • 1/8 tsp Cayenne Pepper
  • 4 Garlic cloves peeled
  • 1/4 cup Fresh Cilantro (dhania) chopped
  • Salt as needed

How to make Tortilla Soup

  1. Combine the ancho pepper and water in a bowl. Leave for 20 minutes. Drain and set aside.
  2. Heat oil in a large saucepan. Add half of the tortilla strips , cook until golden brown. Drain excess oil on paper towels
  3. Repeat with remaining tortilla strips and set aside.
  4. In the reserved oil, cook the onion, garlic and pepper over low heat until it turns golden brown,
  5. Remove from the heat and cool slightly. Transfer to a food processor, add tomatoes. Cover and process until smooth.
  6. Cook this mixture in a pan over medium heat for 10 mins until it has thickened to the consistency desired
  7. Add broth and bring to a boil. Reduce heat, cover and simmer for 30 minutes.
  8. Add the cilantro, salt and cayenne peppers
  9. Place cheese and avocado among six bowls. Top with the soup, tortilla strips and lime.
