Orange Segments Cake

Ingredients to make Orange Segments Cake

  • 1/2 cup butter
  • 2 large eggs at room temperature
  • 3/4 cup sugar
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • 1/4 cup orange juice
  • 1/4 cup oil
  • 1 cup orange segments
  • 1 tsp vanilla extract

How to make Orange Segments Cake

  1. 1. Preheat the oven to 180 degree centigrade
  2. 2. In a large bowl cream the butter and sugar together until fluffy.
  3. 3. Add the eggs one at a time. Mix together all the dry ingredients, i.e the flour, baking powder and salt in one bowl and in another bowl mix all the wet ingredients.
  4. 4. Mix the dry ingredients alternately with the wet ingredients into the egg and butter mixture. Beat for 1 minute. Add 3/4 cup of the orange segments, reserving the rest to top.
  5. 5. Pour into a prepared butter paper lined tin and bake for 45 minutes or until the skewer comes out clean.
  6. 6. Dust with icing sugar and top with the remaining orange segments
My Tip: You can also add a bit of orange zest to the batter

Tried the cake... its awesome. But the orange segments settled at the bottom of the cake tin... plz guide what did i do wrong....
