Spaghetti with lemon cream, feta and peas

Ingredients

  • 400 grams spaghetti
  • Water to boil the pasta
  • For the lemon cream sauce:
  • 1 onion finely chopped
  • 2 cloves of garlic
  • 2 tsp butter
  • 1 tsp olive oil
  • 200 ml cream
  • Juice of 2 Lemons
  • Pepper to taste
  • 1/8 tsp of thyme
  • For the topping
  • 1 cup boiled peas
  • 4 tomatoes sliced
  • 1/2 cup feta crumbled
  • 2 tbsp parmesan cheese
  • Salt to taste

Steps

  1. Put a large pot of water with a bit of salt to boil. Add in the pasta and cook until al dente. Drain and keep aside. Meanwhile, boil the peas and keep aside.
  2. In a large pot add in the olive oil and butter. Add in the onions, garlic and thyme and cook until the onions are soft and fragrant. Stir in the cream.
  3. Take off the heat and add lemon juice, salt and pepper. Stir and add in the peas and the parmesan to it.
  4. Toss the pasta into the mix. Transfer into serving bowls. Add the sliced tomatoes and crumble in the feta on top. Serve warm.
