Ingredients to make Quick Spring Onion Pakora

  • Chopped spring onions (green) - 1 bunch or 2 cups tightly packed
  • Thinly sliced spring onion bulbs - 3/4th cup or whole 4-5 small
  • asafoetida - 1/2 tsp
  • Garam masala - 1 tsp
  • cumin Seeds - 1tsp
  • Minced garlic 1/2 tbsp
  • Finely chopped green chillies - 2-3
  • salt to taste
  • gram flour / besan - 1/2 - 3/4 cup
  • oil for frying

How to make Quick Spring Onion Pakora

  1. FINELY CHOPPED SPRING ONION (GREEN) - 1 BUNCH OR 2 CUPS TIGHTLY PACKED THINLY SLICED SPRING ONION BULBS - 4-5 SMALL OR 3/4 CUP CHOPPED GREEN CHILLIES - 2-3 MINCED GARLIC - 1/2 TBSP CUMIN SEEDS - 1 TSP GARAM MASALA - 1 1/2 TSP ASAFOETIDA - 1/2 TSP GRAM FLOUR - 1/2 - 3/4 CUP OIL FOR FRYING SALT TO TASTE
  2. IN A LARGE BOWL TAKE CHOPPED SPRING ONION (GREEN) AND SLICED ONION BULBS.
  3. ADD SALT. RUB THE SALT, SPRING ONION USING FINGERTIPS AND PALM. THEY WILL RELEASE SOME WATER.
  4. ADD CHOPPED GREEN CHILLIES, MINCED GARLIC, GARAM MASALA, ASAFOETIDA AND CUMIN SEEDS. MIX WELL. COVER, KEEP ASIDE FOR 30 MINUTES.
  5. AFTER 30 MINUTES, SLOWLY ADD GRAM FLOUR. START MIXING IT.
  6. MIX WELL.
  7. IF REQUIRED ADD MORE GRAM FLOUR SLOWLY AND START MIXING IT AGAIN. MIX WELL TILL IT INCORPORATES WELL WITH EACH OTHER.
  8. IN A NON-STICK PAN HEAT OIL. DROP BHAJIS OR PAKORAS USING SPOON OR HAND. FRY ON LOW MEDIUM HEAT TILL GOLDEN BROWN AND CRISP FROM BOTH THE SIDES.
  9. DRAIN EXCESS OIL AND PLACE THEM ON KITCHEN TOWEL IN A PLATE TO ABSORB EXCESS OIL.
