Caramel Florentines

Ingredients to make Caramel Florentines

  • 3/4 cup almonds
  • 1/2 cup caramel sauce
  • 1 tbsp plus 2 tsp all-purpose flour
  • 1/8 tsp salt
  • 1/3 cup granulated sugar
  • 1 tbsp coconut milk (or any milk)
  • 1 tblsp honey
  • 2 tblsp coconut oil
  • For the filling
  • 150 grams cream cheese
  • 75 grams butter
  • 1 cup Icing sugar
  • 1 tsp caramel sauce

How to make Caramel Florentines

  1. Preheat an oven to 160 degree centigrade. Line a cookie sheet with parchment paper. Set aside.
  2. In a blender crush the almonds and the sugar together. Remove and add in the flour and salt.
  3. In a saucepan heat the caramel sauce, honey and coconut milk together. Bring to a boil and pour into the almond mix.
  4. Let the mixture cool. Take dollops of the almond dough and make equal balls. Arrange them on the cookie sheet and press down. Make sure there's enough space between the cookies as they will spread a bit.
  5. Bake for 15 to 20 minutes or until the cookies are done. Remove and cool completely
  6. Meanwhile make the filling by whisking the cream cheese and butter together. Sift in the icing sugar and the caramel. Keep aside
  7. Once the cookies are cool, slather one cookie with the cream cheese mix and top with another cookie. Freeze for 10 minutes before eating.
