About Mediterranean Chickpea Salad Recipe

This is a delicious and simple salad using chickpeas, I made it from Silk road Vegetarian cookbook.

Mediterranean Chickpea Salad

Ingredients to make Mediterranean Chickpea Salad

  • 3/4 cup dried chickpea , soaked overnight
  • 1 carrot grated
  • 1 celery stalk grated
  • 1/2 red onion chopped
  • 1/2 green bellpepper diced
  • 3 tbsp finely chopped dill
  • 3 tbsp olive oil
  • 1/4 tsp sugar
  • 1/4 tsp salt
  • juice from one lemon

How to make Mediterranean Chickpea Salad

  1. Cook the soaked chickpeas till soft .
  2. Mix together the sugar , salt , lemon juice and olive oil together.
  3. in a bowl, combine boiled chickpea, carrot, onion, celery, bellpepper, dill and toss well.
  4. To this add the lemon juice , olive oil mixture and toss again.
  5. place the salad in the serving plate and sprinkle dill on top.
  6. Cover and Refrigerate for an hour before serving or serve at room temperature.
  7. Mediterranean chickpea salad is ready to serve.
