ABOUT Kadai Chicken RECIPE

My Mom Make Kadai chicken at home is really very delicious . Kadai Chicken is a very famous non-veg delight in Punjab. This spicy & yummy recipe tastes juicy with distinct flavor of bell pepper.

Ingredients Serving: 4

  1. Chicken - 1/2 kg
  2. Red chilly pwd - 2 tsp
  3. Turmeric pwd - ½ tsp
  4. Ginger garlic paste - 1 tsp
  5. Lemon juice - 1 tbsp
  6. Salt - ½ tsp
  7. Oil - 3 to 4 tbsp
  8. Bay leaf - 1
  9. Cardamom - 2
  10. Cloves - 4
  11. Cinnamon - 1
  12. Star anise - 1
  13. Onion - 2
  14. Ginger garlic paste - 1 tsp
  15. Coriander pwd - 1 ½ tsp
  16. Cumin pwd - ½ tsp
  17. Tomato - 2
  18. Red chilly pwd - 2 tsp
  19. Chopped capsicum - ¼ cup
  20. Coriander leaves
  21. Salt to taste

Instructions

  1. Prepare marinade with the ingredients given below Red chilly pwd Turmeric pwd Ginger garlic paste Lemon juice Salt
  2. Add chicken and mix well in the marinade
  3. Marinate for 30 minutes.
  4. Heat oil in a thick bottomed kadai.
  5. Add whole garam masala spices
  6. Sauté till it crackles.
  7. Add finely chopped onion.
  8. Fry till onion turns light brown.
  9. Add ginger garlic paste and sauté till raw smell disappears. ( approx 1 min )
  10. Add coriander pwd and cumin pwd.Sauté further for 2 mins.
  11. Mix well and cook closed for 2 mins.
  12. Once the oil separates out, add red chilly pwd, cook till the masala thickens.
  13. Combine and add marinated chicken pieces.
  14. Mix properly in medium flame, so that all the pieces are coated well in the gravy.
  15. Add 1 ½ cup water, cover and cook for 10 mins.
  16. Stir in between. Cook for another 5 to 7 mins.
  17. Once the chicken is three-fourth done, add chopped capsicum / bell pepper, garam masala & salt.
  18. Stir well and cook for another 5 to10 mins in low flame. ( till the chicken is completely cooked .
  19. Turn off flame and sprinkle freshly chopped coriander leaves.
  20. Yummy Kadai Chicken is ready.
