About Sheermaal or Taftaan

Generally, this sheermaal is made in tandoor but I have tried to recreate it on the tawa. It is a rich roti to be had with typically Awadhi fare.

Sheermaal or Taftaan

Ingredients to make Sheermaal or Taftaan

  • 3 cups all purpose flour
  • 5 tbsp refined oil
  • 1 tsp Salt
  • 1/2 tsp sugar
  • 3/4 cup milk to knead
  • 1/2 tsp orange colour mixed in water
  • Refined oil to fry

How to make Sheermaal or Taftaan

  1. Add the flour, salt, sugar, oil and some milk to knead the dough, add more milk as you knead. Knead a soft dough.
  2. Now cut half the dough and place in on the other half, knead a bit.
  3. Repeat this two to three times. This is done to create layers.
  4. Keep aside for half an hour.
  5. Divide the dough into 5 to 6 balls. Roll them out and prick with a fork
  6. Now to cook, take a non stick pan, Heat it on low flame
  7. put the rolled out dough on the pan
  8. once it is a little done, put on a plate and put some color on one side with some cotton dipped in colour
  9. Put some oil in the pan and place the colored side to cook, be careful there should be no black spots on it.
  10. Now flip and cook the other side.
  11. Remove from heat, do the same with the remaining dough.

My Tip:

Tastes really good with kababs.
