Cashew and Choco Chip Bars

Ingredients to make Cashew and Choco Chip Bars

  • Butter 1/2 bowl or 115 gms at room temperature
  • Self raising flour 1 big bowl or 150 gms
  • Eggs 2
  • Sugar 3/4 cup or 150 gms
  • Vanilla essence 1/2 tsp
  • Chocolate chips a few
  • Cashews chopped roughly, a handful

How to make Cashew and Choco Chip Bars

  1. In a wide bowl, mix the butter and sugar together with a hand blender. Now add in 2 eggs and blend again. Next add vanilla essence and mix.
  2. Now slowly and gradually keep adding self raising flour (cut and fold method) with the help of a spatula. Add chocolate chips and give it a gentle mix. Transfer this into a baking tin. Garnish with cashews on top which are dusted with maida.
  3. Preheat the OTG oven on 200 degrees centigrade first for 10 minutes. Dust your cake tin with butter and maida/ flour to unmould the cake easily.
  4. Reduce the temperature to 180 degrees and bake your cake for about 40 to 45 minutes. Keep checking with a toothpick. If it comes out clean that means the cake is done.
  5. Put it on a wire rack to cool. After cooling cut into slices and serve.
  6. Serve it with tea or coffee to enjoy!
