Vegetable Fried Rice

Ingredients to make Vegetable Fried Rice

  • 2 cups Basmati Rice
  • 2 medium onions, chopped fine (or 4-6 spring onions)
  • 2 medium Capsicum, diced
  • 2 Green chillies or as per taste
  • 10-15 beans, chopped small
  • 2 small carrots , chopped small
  • 1 cup green peas
  • 1 cup cauliflower florets
  • 2 tsp oil
  • Salt as per taste
  • 1 tsp ground pepper
  • 2 tbsp tomato ketchup
  • 4 tbsp Soya sauce
  • 2 tbsp Vinegar
  • 1 tsp chilli sauce

How to make Vegetable Fried Rice

  1. Soak rice for at least 30 minutes. Then cook it and keep aside. You can use 3 cups of water for 2 cups of rice. (One whistle in pressure cooker or use a rice cooker. ) Then let the rice cool a bit.
  2. Cut the vegetables into small pieces. Cook with enough water or steam cook the carrot, beans, green peas and cauliflower. Once done, drain and keep aside. Chop the onions (or spring onions) and chillies.
  3. Heat 2 tsp oil in a pan and saute the onions and chillies till they are done. Once the onion turns brownish, add the cooked vegetables. Then add the ketchup, soya sauce, chilli sauce, vinegar, salt and pepper. Mix carefully until well combined.
  4. Add the cool cooked rice. Mix well and take it off the heat.
  5. Serve hot for best taste.

My Tip:

This works great with leftover refrigerated rice.

To make it cook ....rice can b cooked with bit less water in microwave.....place dem under cold running water....n drain all d excess water......

Very good recipe, but i think its better to fry the veggies n let it get cooked there in oil itself, it will taste well.
